The latter will be even better if you top them with some ricotta.
I have a select group of sweets that I enjoy this pregnancy. Dark chocolate, fruity items, and coffee flavored desserts.That doesn't mean I'm a healthy pregnant eater; it just means I go heavy on the savory options. If you need proof, just check out my Instagram as of late. I think I mention mac and cheese no less than three times. Anyway, one of the other sweets that I still enjoy would be cheesecake with a thick graham cracker crust.
When I was brainstorming how to use Nestle Toll House DelightFulls Dark Chocolate Morsels with Cherry Filling, this recipe from Buns in My Oven would please both my tastebuds and those of the many little ones whom I am currently surrounded by out here in San Diego. Dark chocolate, fruity, and graham crackers check off three of my small group of five. The DelightFulls made checking off dark chocolate and fruity easy peasy. I never really have cherry flavoring or dried cherries around or in stock, but since chocolate chips are one of my bribing techniques, we always have those in the freezer.
Here is the recipe:
Dark Chocolate Cherry Graham Cracker Cookies
adapted from Buns In My Oven.
1/2 cup (1 stick) butter, room temperature
1 cup brown sugar
1 1/2 teaspoons vanilla
1 1/2 cups graham cracker crumbs (1 pack of graham crackers processed in a blender or food processor)
3/4 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup Nestle Toll House DelightFulls Dark Chocolate Morsels with Cherry Filling
Preheat oven to 350 degres.
In the bowl of a stand mixer, cream together the butter and sugar.
Beat in the vanilla and egg until combined
In a bowl, combine the graham cracker crumbs, flour, baking soda, and salt. Add graham cracker mixture to the butter mixture until just combined.
Stir in the Nestle Toll House DelightFulls Dark Chocolate Morsels with Cherry Filling
Using a tablespoon, drop balls of dough onto a parchment lined baking sheet.
Bake for 7 minutes. Cookies will look slightly underdone, but should firm when cooled.
Top with ricotta cheese or cream cheese for a cheesecake kick.
They were delicious. I thoroughly enjoyed the Dark Chocolate Morsels with Mint Filling as well especially because I somehow have eaten a Thin Mint this Girl Scout cookie season.
